This creamy Tuscan ravioli soup is a delightful blend of flavors that transports you to Italy with every spoonful. It’s a comforting dish that’s easy to prepare and perfect for a cozy evening.

Ingredients

Scale
  • 300 grams Ravioli (your choice)
  • 1 liter vegetable broth
  • 200 milliliters cream
  • 2 carrots (diced)
  • 1 onion (finely chopped)
  • 2 garlic cloves (chopped)
  • 100 grams spinach (fresh or frozen)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley) for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat (about 2 minutes). Make sure the oil is hot but not smoking.
  2. Add the finely chopped onion and sauté for about 3-4 minutes until soft and translucent. Stir occasionally to prevent burning.
  3. Add the chopped garlic and diced carrots, and sauté everything together for another 3 minutes until the garlic is fragrant.
  4. Pour 1 liter of vegetable broth into the pot and bring the mixture to a boil (about 5 minutes). Ensure the broth is bubbling vigorously.
  5. Once the broth is boiling, add the ravioli and cook according to package instructions, usually about 4-5 minutes.
  6. Reduce the heat and stir in 200 milliliters of cream. Let the soup simmer for another 2-3 minutes until it thickens slightly.
  7. Add the spinach and continue to cook for 1-2 minutes until the spinach has wilted. Stir well to combine everything.
  8. Season the soup with salt and pepper to taste and serve hot in bowls, garnished with fresh herbs.

Nutrition

Keywords: To achieve the perfect consistency, be careful not to overheat the cream, as it can curdle. Use a large pot to avoid overcrowding, which can lead to uneven cooking.
