Instructions

  1. Preparation (5 minutes): Peel and dice the onion and garlic to ensure even cooking and better flavor distribution.
  2. Heat oil (2 minutes): Heat 2 tablespoons of oil in a large pan over medium heat until it shimmers.
  3. Sauté onion (3 minutes): Add the diced onion to the pan and sauté, stirring occasionally, until soft and lightly golden.
  4. Add garlic (1 minute): Add the chopped garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  5. Stir in tomato paste (2 minutes): Add 2 tablespoons of tomato paste and stir well, cooking for about 2 minutes to develop the flavors.
  6. Add spices (1 minute): Sprinkle in 1 teaspoon of salt, 1 teaspoon of oregano, 1 teaspoon of paprika, and a pinch of red pepper flakes. Stir well and let it simmer briefly.
  7. Pour in broth and beans (5 minutes): Pour in 1 cup of vegetable broth and the 2 cans of white beans. Let it simmer for about 5 minutes until the broth thickens slightly.
  8. Stir in sun-dried tomatoes and spinach (3 minutes): Add 1/2 cup of sun-dried tomatoes and 2 cups of spinach. Stir until the spinach wilts and the colors are vibrant.
  9. Stir in cream (2 minutes): Pour in 1/2 cup of cream and let the mixture simmer on low heat for 2 minutes until creamy and well combined.
