- 200 g brown lentils (soaked overnight)
- 500 g potatoes (diced)
- 1 large onion (finely diced)
- 2 cloves garlic (finely chopped)
- 2 carrots (sliced)
- 1 stalk leek (sliced)
- 1 liter vegetable broth
- 2 bay leaves
- 1 teaspoon thyme (dried)
- 1 teaspoon paprika (sweet)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Once the oil is hot, add the diced onion and chopped garlic. Sauté for about 3-4 minutes until they are translucent and fragrant.
- Add the sliced carrots and leek, and sauté everything for an additional 5 minutes. Ensure the vegetables do not burn; they should be soft but not browned.
- Add the soaked and drained lentils and diced potatoes to the pot. Include the bay leaves, dried thyme, and paprika, and stir everything well to evenly distribute the spices.
- Pour 1 liter of vegetable broth into the pot and bring the mixture to a boil. Once the broth is boiling, reduce the heat to low to medium and let the stew simmer for 30-35 minutes. Stir occasionally to prevent sticking.
- After 30-35 minutes, the lentils and potatoes should be soft. Remove the bay leaves and season the stew with salt and pepper. Serve hot, garnished with fresh parsley.
