Instructions

  1. Begin with the caramelized onions: Heat 2 tablespoons of butter and 1 tablespoon of olive oil in a large pan over medium heat. Add the thinly sliced onions and stir well. Cook for 10-15 minutes until they are soft and golden brown, stirring regularly to avoid burning.
  2. Once the onions are caramelized, add 1 teaspoon of sugar (optional), salt, and freshly ground black pepper to taste. Cook for another 5 minutes until they are deep brown and sweet. Then remove them from the pan and set aside.
  3. For the smash burgers: Heat the pan again over medium to high heat. Divide the ground beef into 4 equal portions (about 113g each). Do not form them into tight balls; keep them loose.
  4. Place one portion of meat in the hot pan and press down firmly with a spatula to form a flat burger. Season with salt, pepper, and optionally 1 teaspoon of garlic and onion powder. Cook the burger for about 3-4 minutes until the bottom is nicely browned.
  5. Carefully flip the burger and immediately place a handful of shredded cheese on top. Cook for another 2-3 minutes until the cheese melts and the burger is cooked through.
  6. Repeat this process with the remaining portions of ground beef. Keep the finished burgers warm in the oven while you prepare the others.
  7. To assemble the tacos, warm the tortillas in a separate pan or in the microwave for 20-30 seconds until they are warm and flexible.
  8. Place one burger on each tortilla, add a generous portion of the caramelized onions, and garnish with fresh cilantro. If desired, add a spoonful of sour cream or Greek yogurt and some hot sauce.
