  • 1/3 cup rice flour or all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon oil
  • 1/2 teaspoon garlic powder, optional

  • 1/4 cup light soy sauce
  • 1 tablespoon rice vinegar
  • 12 tablespoons Sriracha sauce (adjust to taste)

  • 23 tablespoons honey or maple syrup
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

  1. Preparation of the cauliflower (5 minutes): First, wash the cauliflower thoroughly and cut it into even florets. Make sure the pieces are not too small so they do not burn while baking.
  2. Prepare the batter (10 minutes): In a bowl, mix the rice flour or all-purpose flour, cornstarch, oil, and garlic powder. Gradually add water until a smooth, thick batter forms. The consistency should be thick enough to coat the florets.
  3. Coat the cauliflower (5 minutes): Dip the cauliflower florets into the batter, ensuring they are evenly coated. Let excess batter drip off.
  4. Preheat the oven (5 minutes): Preheat the oven to 200 °C (400 °F) and line a baking sheet with parchment paper to prevent sticking.
  5. Bake the cauliflower (20 minutes): Spread the coated cauliflower florets evenly on the baking sheet. Bake in the preheated oven for 20 minutes, until golden brown and crispy. Make sure to flip them halfway through for even cooking.
  6. Prepare the sauce (10 minutes): While the cauliflower is baking, heat the sesame oil in a small pot. Add the finely chopped ginger and garlic, and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.
  7. Finish the sauce (5 minutes): Add the soy sauce, rice vinegar, Sriracha, honey or maple syrup, and cornstarch. Stir well and bring the mixture to a boil. Reduce the heat and let the sauce simmer for another 2-3 minutes until it thickens.
  8. Glaze the cauliflower (5 minutes): Once the cauliflower is baked, remove it from the oven and pour the prepared sauce over it. Mix everything well so the florets are evenly coated with the sauce.
