  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 4 medium carrots, peeled and cut into 1-inch pieces
  • 3 medium parsnips, peeled and cut into 1-inch pieces
  • 2 medium potatoes, peeled and cut into 1-inch cubes (Yukon Gold or Russet)
  • 1 large onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme (optional)
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat the oven to 350 °F (175 °C).
  2. In a small bowl, mix the minced garlic, rosemary, thyme, olive oil, Dijon mustard, honey, salt, black pepper, onion powder, and paprika into a paste.
  3. Rub the spice paste evenly over the entire beef roast and place it in a large roasting pan.
  4. In a separate bowl, combine the prepared root vegetables (carrots, parsnips, potatoes, and onions) with 2 tablespoons of olive oil, salt, pepper, and optional thyme.
  5. Spread the root vegetables around the beef in the roasting pan.

  7. Cover the roasting pan with aluminum foil and place it in the preheated oven for 2 hours.
