- 4 pieces of wheat tortillas (about 25 cm in diameter)
- 200 g fresh spinach leaves
- 150 g feta cheese (crumbled)
- 100 g grated Gouda or Cheddar cheese
- 1 small red onion (finely diced)
- 1 clove garlic (pressed)
- 1 tablespoon olive oil
- 0.5 teaspoon smoked paprika
- 0.5 piece of lemon (fresh juice)
- 100 g canned corn (drained, optional)
- Heat 1 tablespoon of olive oil in a large pan over medium heat. When the oil is hot, add the diced red onion and the pressed garlic clove. Sauté for 2 minutes until the onion becomes translucent and the garlic is aromatic.
- Now add the fresh spinach to the pan in portions. Allow it to wilt while stirring, which takes about 2-3 minutes. Make sure not to overcook the spinach so it retains its fresh green color.
- Season the spinach mixture with salt, pepper, and 0.5 teaspoon of smoked paprika. Stir everything well and let it cook for about 1 minute to allow the spices to release their flavors.
- Remove the pan from heat and let the mixture cool slightly. Add the fresh lemon juice and mix everything well.
- Place one tortilla in a clean pan and sprinkle a thin layer of grated Gouda on top. This prevents the tortilla from sticking to the bottom of the pan.
- Evenly distribute a portion of the spinach mixture over the tortilla. Sprinkle the drained corn (optional) and crumbled feta on top. For extra cheesy goodness, you can sprinkle some more Gouda on top.
- Place a second tortilla over the filling and press it down lightly. Cook the quesadilla over medium heat for about 3-4 minutes until the bottom is golden brown. Be careful not to cook it too long to avoid burning.
- Gently flip the quesadilla with a spatula and cook the other side for another 3-4 minutes until golden brown.
