Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, and salt. This takes about 2 minutes until everything is evenly mixed.
  2. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract. This should take about 3 minutes.
  3. Add the liquid ingredients to the dry ingredients and gently stir until just combined. Be careful not to overmix to keep the pancakes fluffy; this should not take longer than 2 minutes.
  4. Preheat a non-stick skillet or crepe pan over medium heat. A small drop of water should dance on the surface when it's hot enough.
  5. Using a small ladle or spoon, pour a small dollop of batter onto the skillet. The pancakes should cook for about 2-3 minutes on one side until bubbles form and the edges look set.
  6. Flip the pancakes and cook for another 1-2 minutes until golden brown. Be careful not to set the temperature too high to avoid burning.
