- 250 g cottage cheese
- 2 tablespoons olive oil
- 2 cloves garlic, finely chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1 pinch cayenne pepper (optional)
- 250 g fresh tomatoes, diced
- 100 ml vegetable broth
- 1 handful fresh basil, roughly chopped
- Finely chop the onion and garlic. This takes about 5 minutes. Make sure they are evenly chopped for even cooking.
- In a large pan, heat the olive oil over medium heat. After about 2 minutes, the oil should be hot enough to add the onions and garlic.
- Add the onions and garlic to the hot oil and sauté for about 3-4 minutes, stirring occasionally, until they are soft and lightly golden. This will give the sauce an aromatic base.
- Add the diced tomatoes and stir well. Let everything simmer together for about 5 minutes until the tomatoes are soft and release their juices.
- Add the vegetable broth, oregano, salt, and pepper. Stir everything well and cook the mixture for another 5 minutes. Be careful not to let the sauce burn.
- Gently stir in the cottage cheese into the sauce. Let the sauce simmer for another 3-5 minutes until it is heated through and reaches a creamy consistency. Stir occasionally to prevent sticking.
- Add the fresh basil and remove the sauce from the heat. Let it rest for 2 minutes to allow the flavors to develop before serving over cooked pasta.
