  • 180 grams (⅔ cup) Greek yogurt
  • 1 ripe banana (about 100 grams (3.5 oz.), or ½ cup applesauce)
  • 80 ml (⅓ cup) maple syrup (or honey)
  • 150 grams (1 ½ cups) oat flour (or preferred flour)
  • 50 grams (½ cup) almond flour (or more oat flour)
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • ⅙ tsp salt
  • 60 ml (¼ cup) milk of choice
  • 50 grams (¼ cup) chocolate chips (dark or extra dark)

Instructions

  1. Preheat your oven to 180ºC (360°F).
  2. Prepare a 20 cm (7.8 inch) cake pan by lining it with parchment paper to prevent sticking.
  3. In a large bowl, mash the banana with a fork until smooth (about 2 minutes).
  4. Add the Greek yogurt, egg, maple syrup, and vanilla extract to the mashed banana. Mix well until smooth (about 3 minutes).
  5. Add the oat flour, almond flour, and baking powder to the bowl. Mix well while slowly adding the milk (about 2 minutes), being careful not to overmix to keep the cake fluffy.
  6. If desired, fold in the chocolate chips gently into the batter (about 1 minute).
  7. Pour the batter into the prepared cake pan and smooth the surface (about 1 minute).
  8. Bake the cake in the preheated oven for about 30 minutes. The cake is done when a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for about 10 minutes before removing it and allowing it to cool completely on a wire rack (about 30 minutes).
