- 12 oz (340 g) Linguine
- 1 lb (450 g) Raw shrimp (peeled and deveined)
- 3 tablespoons Olive oil
- 2 tablespoons Butter
- 4 cloves Garlic, minced
- 1 tablespoon Lemon zest
- 2 tablespoons Fresh lemon juice
- 1 cup Crème fraîche
- ¼ cup Fresh parsley, chopped
- ¼ cup Fresh basil, chopped
- ½ teaspoon Red pepper flakes (adjust to taste)
- Salt to taste
- Black pepper to taste
- Grated Parmesan cheese for serving (optional)
- Lemon wedges for garnish (optional)
- Set a large pot of water to boil. Add a pinch of salt. Cook the linguine for about 8-10 minutes until al dente, stirring occasionally to prevent sticking.
- While the pasta is cooking, heat the olive oil and butter in a large skillet over medium heat. Wait until the butter is melted and slightly foamy, about 1-2 minutes.
- Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant but not browned. Be careful not to burn the garlic as it will become bitter.
- Add the shrimp to the skillet and cook for about 3-4 minutes until they are pink and opaque. Turn the shrimp to ensure even cooking. This is a crucial step as overcooking will make them tough.
- Add the lemon zest, lemon juice, red pepper flakes, salt, and pepper. Mix everything well and let it simmer for another 1-2 minutes to combine the flavors.
- Reduce the heat to low and add the crème fraîche to the skillet. Stir well until the crème fraîche is evenly distributed and heated through, about 1-2 minutes.
- Once the linguine is done, drain it and reserve some pasta water (about ½ cup). Add the linguine to the skillet with the shrimp mixture and mix well. Add reserved pasta water as needed to thin the sauce.
- Finally, fold in the fresh herbs (parsley and basil). Taste the dish and add more salt and pepper if desired. Serve the dish immediately.

Keywords: Monitor the cooking time of the shrimp closely to ensure they remain tender. Use fresh herbs for the best flavor, and adjust the heat level by varying the red pepper flakes. If crème fraîche is unavailable, sour cream or Greek yogurt can be used as substitutes.
